Welfenspeise (Guelph Dish)

. About 1 litre: 4 generous portions, 5-6 normal portions. 8 steps
custard Pour custard into dessert glasses until they are half full. Then make the sabayon, and pour it on top.
410ml milk bring to boil   mix, bring to boil
4 tablespoons cornflour mix
90ml milk
40g sugar
1 vanilla bean's seeds
2 egg whites beat until very firm   off heat, fold in
sabayon
2 egg yolks mix, heat in a bain-marie while beating with a mixer until a frothy cream is formed
1 egg
1 tablespoon lemon jucie
2 tablespoons sugar
250ml white wine
1 tablespoon cornflour
Garnish with chocolate shavings
