Cut slit most of way along, scoop out leaving 5mm thick

Wrap in foil, bake in moderate oven 1 hour. Open foil, brush with more butter, bake 15 minutes. Cool 10 minutes, remove string
3/4 cup breadcrumbs

100g cheddar

1 onion

1 green capsicum
chop finely
1/2 cup frozen peas
500g beef mince
125g condensed tomato soup
1 tablespoon flour
salt and pepper
melted butter
Brush well
Cut diagonally into 2cm slices.
This is way too much filling for a regular baguette — about 1/3 the amount was all that would fit. The rest made a decent meatloaf.
Instead of condensed tomato soup, I used 2 tablespoons of tomato concentrate, and 1 tin of chopped tomatoes, drained. And I spiced it with a mixture of celery seed, coriander seed, mustard seed, chilli flakes, and a little cumin, all toasted then ground.
