Wash, tear into bite-size pieces, discard stem. Steam 5 minutes. Drain well. |

Create a fillo-wrapped spiral as follows. Lay down one or two sheets of pastry, depending on the size. (In the picture above I'm using one.). Spread filling down the long side, leaving some space at one end. Wrap into a spiral. Prepare the next roll. Slot into first roll. Repeat. |
Cook in moderate oven 45–60 minutes. |
