Cut into rectangles about 2.5cm thick. Place two skewers on the long end of each side of the potato. Make close even cuts from top to bottom on the short side, using the skewers as stoppers so the knife doesn't go all the way through. Flip the potato, keep the skewers on the long sides, and make diagonal even cuts on the other side using the skewers as stoppers. Place a skewer through the middle and fan out. |
Brush with oil, and bake in moderate or moderately hot oven 30 minutes. |
