Add. Simmer covered 10mins. |

| 250ml coconut milk |

| 500g new potatoes |
in 3cm cubes |
| 400g carrots |
in 2cm chunks |
| 150g red lentils |

Add. Simmer, covered, about an hour. Stir fairly often. |
