European mulled wines

On bonfire night, after the fireworks, everyone comes over for mulled wine and mince pies.

Gluwein
6 inch cinnamon   Simmer 15 minutes, strain
3 blades mace
4 cloves
1 teaspoon ground nutmeg
1 sprig mint
2 tablespoons sugar
1/2 lemon juice and rind
1 bottle red wine
1/2 cup port   Add, heat thoroughly without boiling
French mulled wine
6 inch cinnamon Heat gently, infuse 1 hour. Strain and reheat but do not boil.

140ml brandy

One year we left them for too long and they nearly boiled dry - but they were thick and sweet and very good.
