Lima bean (lopia) plaki

Serve hot or cold, with roasts or fish
. Serves 6-8. 12 steps
2 onions finely chopped   saute
4 cloves garlic minced
4 carrots finely chopped
2 sticks celery finely chopped
2 bunches parsley leaves chopped
1/4 cup olive oil
2 tablespoons dill (or 1T dried) chopped   add, simmer 20 minutes
2 limes' juice
1 can (400g) whole tomatoes
1 teaspoon fines herbes
2 cups vegetable broth
salt and pepper
450g large white lima beans soak in water overnight; wash and drain parboil in water 25 minutes; drain   add, simmer 25 minutes or until beans are tender
2 cups water
This is Marcia's version: the original recipe has half the onion, garlic, carrots, and celery; and uses 1 lemon's juice rather than lime; and uses 3/4 cup olive oil.
