Warm spiced kippers

8 kipper fillets rinse, pat dry Pour sauce over fish, top up with water so that the fish is barely covered. Bake in moderate oven 15 minutes or until fish is tender and tears apart easily. Cool a little.
2 tablespoons coriander seeds crush lightly mix
1 tablespoon mustard seeds
2 teaspoons light brown sugar
175ml cider vinegar
12 juniper berries
3 bay leaves
100ml light olive oil
Serve with hot brown toast and a slice of lemon.
