Chicken pinwheels

The goats cheese makes these chicken rolls marvellously succulent.

Cordon Bleu. Serves 6. 5 steps

6 small chicken breasts	Pound between sheets of greasproof paper	Roll up tightly in greaseproof paper, then in foil; twist the ends	Poach in gently simmering water 15 minutes. Unwrap and serve warm.
150g spinach	Layer with filling
150g goats cheese
pepper

This dish would merit a plain light sauce based on chicken stock and onions.
