Make a well in the oat, pour in the water, mix, and knead briefly. Divide into 4 balls. Roll out a ball to a disk of diameter 16cm, on a breadboard lightly floured with extra oat flour. Score a cross, to mark a division into quarters. Slide it into a preheated cast iron skillet on medium heat, and cook for 7 minutes or until the sides start to turn up. Slide out onto a wire rack to cool. |
