Scottish oatcakes (bannocks)

There are many different styles of oatcake, and many different recipes, and this page is to record my attempts at finding a recipe I like.
Makes 16. 4 steps
180g oat bran mix Make a well in the oat, pour in the water, mix, and knead briefly. Divide into 4 balls. Roll out a ball to a disk of diameter 16cm, on a breadboard lightly floured with extra oat flour. Score a cross, to mark a division into quarters. Slide it into a preheated cast iron skillet on medium heat, and cook for 7 minutes or until the sides start to turn up. Slide out onto a wire rack to cool.
100g oat flour
1 teaspoon salt
1 teaspoon bicarbonate of soda
40g butter boil
35g lard
100g water
These taste a bit claggy: maybe it'd be better with no oat flour at all? Also, watch the heat, because they can burn on the bottom. Also, shouldn't it be baking powder, seeing as there's no acid?
