Make sure the aubergines are properly cooked. I was told by an Israeli that the secret to great baba ganoush is to cook the auberines in a ferociously hot oven until they're well and truly charred; this recipe looks a bit timid to me.

450g (1–2 large) aubergines
Prick with a fork. Cook directly on the rack of a moderate oven for 50 minutes, turning occasionally. Remove and allow to cool.
Peel. Chop the flesh (and allow the juices to run away).
