Sweet and sour cucumber sauce
Radio Times
50ml white wine vinegar
Gently heat until sugar dissolves, boil 1 minute. Leave to cool.
stir in
100g castor sugar
1 1/2 tablespoons water
2 teaspoons Thai fish sauce
50g cucumber
very finely dice
25g carrot
25g onion
2 red chillies
thinly slice
The vegetables may be grated for an interesting texture
