Potato candy

2 lb icing sugar     Sift over, one cup at a time, stirring. The mixture will liquefy at first, then thicken. Should reach the consistency of a stiff dough. Knead. Cover with a damp cloth, refrigerate. Shape into small balls.
1 cup warm mashed potatoes combine
1/2 teaspoon salt
2 teaspoons vanilla
1 lb chocolate melt   Dip in chocolate, roll in nuts
2/3 cup ground peanuts (or 1 cup shredded coconut)  
Makes 100 balls
