Nut mazurek
When baking Easter cakes, often there are leftover egg whites which we do not know what to do with. These egg whites can be used for making an exquisite mazurek.
Old Polish Traditions
5 egg whites     beat   Pour into large cake tin, bake in moderate oven 35-40 minutes. Cool, slice in half
5oz sugar     beat in until very stiff
5oz nuts ground   fold in
2 tablespoons sponge cake crumbed
cream whip lightly   Fill with chestnut cream
chestnut puree
sugar
This cake can be glazed with chocolate icing and decorated with chocolate figures
