Jamaican fruit loaf

85g margarine     cream   Pour in greased and lined 8x4 inch loaf tin, bake 1 hour or until well-risen and firm
110g brown sugar  
30ml clear honey     stir in
2 eggs beat   mix in well
225g banana peeled, mashed
225g self-raising flour sift   fold in
1 teaspoon ground allspice
1/4 teaspoon bicarbonate of soda
1/2 teaspoon salt
225g raisins  
15ml clear honey     Glaze, cool
Lucian says this dish is more sophisticated if the raisins are omitted. Personally, I am not sure if banana bread can be sophisticated at all.
It looks nicer during cooking if you use softened butter instead of margarine.
