Lemony fish bites

500g white fish fillets
mince coarsely
shape into walnut-size balls
Melt butter in a large heavy-based pan. Cook fish balls until lightly browned; cover with a tight lid and cook a further 5-8 minutes.
6 slices bread
roughly crumbed
mash
3/4 cup cittage cheese
mix
1/4 cup spring onions
chopped
1 egg
lightly beaten
1 teaspoon lemon rind
grated
flour
mix
coat
salt and pepper
3 tablespoons butter
Serve hot or cold. Suitable for a pic-nic.
