Yu Sheng (tossed fish salad)

This dish is traditionally eaten in Singapore at Chinese new year.

4 large carrots finely grated   lay out in a ring on a large dish Ladle the seasonings over the vegetables, explaining why each in turn is auspicious. Then, everyone uses chopsticks to sheng lift the salad. bu bu gao sheng: each step is closer to your dreams.
1/2 daikon coarsely grated
1/2 leek finely chopped
lime juice   prepare in separate bowls
jiang fresh ginger sliced jiang shan mei ren: one blessed with beautiful women and lots of land
ji orange sliced ji xiang ru yi: one blessed with prosperity and fortune
hong red pickled ginger hong yun dang tou: good luck upon one's head
jade-like gold, green and white jelly, or melon cut in strips jin yu man tang: house filled with gold and jades
zi sesame seeds lightly freshly toasted duo zi duo sun: have many offspring
shen peanuts lightly freshly toasted zao shen gui zi: have many children fast
golden rice crisps pian di huang jun: gold carpetting the floor
sweet plum sauce mix tian tian mi mi: sweet like honey
3 to 4 tablespoons cooking oil
1 teaspoon sesame oil
yu salmon sashimi sliced nian nian you yu: surplus of everything good
