Looks lovely! Serve with French stick.
A tian is a shallow earthenware dish; I used a ceramic pie dish instead.
Serves 4–5. 6 steps
2 onions sweat, then discard thyme Spread onions in base of dish. Top with pesto. Arrange courgettes and tomatoes in concentric rings on top, the slices standing nearly vertical, alternating courgettes and tomatoes. Sprinkle breadcrumbs on top. Bake in a non-convection oven at 205°C for 70–90 minutes. Push down the vegetables from time to time so that they're submerged.

400g yellow courgettes cut into 2.5mm thick slices
400g tomatoes
breadcrumbs combine breadcrumbs with finely chopped fennel and salt
