Shaker apple cake

This cake is deliciously moist and fruity. It looks very autumnal, decorated with blackberries and walnuts.

150g butter cream   beat Pour into four 20cm cake tins, lined on all sides with baking parchment (the apple is sticky). Bake in moderate oven 45 minutes, or until firm to the touch and a skewer inserted in the middle comes out clean.
175g soft dark brown sugar
175g soft dark brown sugar beat
2 eggs
350g plain flour sift   mix in, alternating the dry and wet ingredients
pinch salt
4 teaspoons baking powder
1 teaspoon ground cinnamon
300ml milk
900g Cox apples peel, chop finely, into 2mm dice   mix in
icing
175g cooking apple   peel, core, dice cool, sieve (makes 110g) beat in electric mixer, until smooth and glossy
1 tablespoon water   cook until soft
225g caster sugar
1 teaspoon cinnamon
1 egg white
The icing needs time for its flavour to settle and to acquire a meringue consistency. As the icing is sweet, the tartness of the blackberries is an excellent contrast.
Cake version 2022-10-24: used 135g sugar in the icing
In the cake pictured, I filled it with French buttercream mixed with apple sauce
