Rhubarb, strawberry and mango compote

. Serves 6. 8 steps
680g rhubarb cut into 1.5cm lengths   toss; cook over medium heat until rhubarb is tender, so that some pieces have fallen apart while others are whole
185g sugar
1/8 teaspoon cloves ground
1 orange zest
juice
360g strawberries cut in half, if big gently stir in; cover and chill
1 mango peel and cut into small pieces
Strawberries in a compote always look a little bit sad and grey. But the flavour of this compote is excellent.
