Potato pancakes (Placki kartoflane, Latkes)

These can be eaten savoury with tomato sauce, or sweet with sugar and cream.
My uncle Kayzie makes the best potato pancakes. The trick is to grate the potatoes on a very fine grating—it's a lot of work, but it's worth it, especially when someone else is doing the cooking.
. Serves 4. 5 steps
2kg potatoes   peel, finely grate Heat a large non-stick frying pan medium-hot. Spoon out portions of 1 large tablespoon. When top becomes firm and bottom is golden brown, turn over and cook until other side is golden brown.
3 eggs   mix well
2 tablespoons plain flour   mix well
salt and pepper
Big potatoes are easier to grate
