Roasted Onion Sauce

This is a brighter alternative to cream, e.g. for soups and sauces.
. Makes 1 cup. 3 steps
3 large onions   Coat lightly in oil. Roast 400°F about 45 mins, until very dark on outside and molten soft on inside. Let cool. Peel. Blend in vitamix, 3-5 minutes.
salt   Add to taste and blend in
lemon juice
olive oil
Keeps 3 days in fridge, 2 weeks in freezer. Blend to reincorporate just before serving.
