Garlic-chile butter

Excellent with corn on the cob
. 7 steps
1/4 cup coriander   finely chop together
3 cloves garlic
1 dried ancho or guajillo chile deseed and tear into pieces soak 30 minutes or until softened, then drain   finely chop and pound until smooth
1/2 cup warm water
1 tablespoon lime juice
pinch sugar
1 teaspoon salt
115g unsalted butter softened   blend in
This will keep in the fridge, covered, for a week.
